Homemade Sazon by Denny Modesto

"This is a family recipe, extending back to my great-grandmother. A homemade sazon speeds up the cooking process."

Ingredients
  

  • 1 medium onion
  • 4 cloves garlic
  • 2 cubanelle peppers or green bell peppers
  • 2 stalks celery
  • 1 cup fresh cilantro leaves
  • 1 cup fresh parsley leaves
  • 10-12 stems fresh thyme
  • Small bunch fresh oregano

Method
 

  1. Peel and roughly chop the onion, Peel the garlic cloves.
  2. Remove the stems and seeds from the cubanelle peppers, then chop them into chunks.
  3. Wash and pat dry the cilantro and parsley.
  4. Remove the thyme leaves from the stems.
  5. Chop the celery into smaller pieces.
  6. Place the onion, garlic, cubanelle peppers, cilantro, parsley, thyme, oregano, and celery into
  7. the bowl of your food processor. You may need to do this in steps depending on the size of your processor.
  8. Pulse the mixture until it is very finely chopped but not pureed. Scrape down the sides of the bowl as needed to ensure everything is evenly processed.
  9. Use a strainer to remove three-quarters of the water from the mixture
  10. Transfer the finely chopped mixture to a clean, airtight container.
  11. Add 2 tablespoons of white vinegar to the mix. This helps to preserve the freshness and flavor.
  12. Store the mix in the refrigerator. It should stay fresh for 2-3 weeks.
